Probably because of latency. For this reason I thought parrying backstabs was impossible because if you were in range for a parry, you were in range for a backstab. But apparently this is not true, the active window for a backstab is smaller than the hitbox created by a whiffed backstab. I think this is only possible with low latency though.

Dark Souls is incredibly clunky in comparison to Ds3. Ds3 is tuned pretty finely and the gameplay is smooth and fluent. DS1/R Not so much. No Omnidirectional rolling. the UI is a fucking mess, General interactions is clunky, Backstab is everybodies middle name in PvP. Infusions suck.

Hey, so to explain my issue, I can get backstabs easy enough in PvE, However in PvP I seem incapable of getting backstabs, my character refuses to even play the backstab attempt animation. I have even tried on afk players, sat behind them and all I get is regular R1's over and over and over :/.
'Becoming a skilled fighter' just comes across as the fedora equivalent of Dark Souls. I can just as easily parry and riposte, block and hit, abuse i-frames via rolling etc. to kill trash mobs, but after playing the Souls games as much as I have, I'm going to take the easiest route and just backstab hollows.
2h ANY weapon gives it a slight damage multiplier to all attacks it delivers other than Backstabs and Ripostes Str weapons get a better bonus because its gets the 1.5x Str bonus Uchi is a dex weapon, therefore it doesnt get the 1.5x but gets the general modifier boost, but because its a backstab, the bonus is nullified. Therefore making 1h and You will get backstabbed when your opponent sees your back in front of them on their screen. Keep in mind that what they see is usually your past of about 0.3-0.8seconds ago, so to avoid backstabs you must move so that they will never be able to reach your back within 0.3-0.8 seconds or you must hit them less than 0.3-0.8 seconds befor ethey land their backstab.
